The Hamburger

How did a sandwich once reviled as something unsanitary and purchased outside factories and at carnivals come so far? The answer can be found in this little book, The Hamburger: A History. “What do Americans think of when they think of the hamburger?” asks the author, Josh Ozersky. “Is it a sizzling disc of goodness, served in a roadside restaurant dense with local lore, or the grim end product of a secret, sinister empire of tormented animals and unspeakable slaughtering practices? Is it cooking or commodity? An icon of freedom or the quintessence of conformity?”

Peter Luger Steak House

Peter Luger’s Steak House in Dumbo, Brooklyn, was established about a century ago in the style of a Bavarian beer hall with grumpy male waiters. You will eat very good juicy, medium-rare, greasy and tasty porterhouse steaks, creamy spinach (an acquired taste), fresh tomatoes and fried potatoes. I would drink a bottle of red wine to lower my cholesterols! A shrimp cocktail with horse-radish sauce is optional. No other choices are necessary.
The bad thing is that you will have to wait at least an hour or more for a table. Beware cash only for the very big tab. Steak-lovers go there very religiously.
Inside tip: I prefer to eat there for lunch … no wait for tables and they offer a delicious juicy hamburger, French fries and a tall glass of beer. A bargain, too.
Afterwards, you can walk across the East River via the Williamsburg Bridge to Manhattan. What a sight.

Slashfood looked at the GQ list of the 20 best hamburgers in America … and suggests that they need to add another …

the best fast-food hamburger there is: a double-double from In-N-Out Burger, the popular California chain. Actually, with its two juicy, 100% pure beef patties, hand-leafed lettuce, tomatoes, secret spread and two slices of American cheese (not processed cheese) on a freshly baked and toasted bun, the double-double is better than a lot of non-fast food burgers, too.

It may come big and ungarnished, the East Coast ideal, tender and untroubled by bones or gristle, everything you look for in a filet mignon but seldom find. It may be the West Coast model, swelling with vegetation, brimming with health and well-being, piled high with all that a seed catalog can provide. A great burger, regardless of regional differences, instills a sense of optimism and fulfillment, that all is right at the table or the counter or the woodgrain, screwed-to-the-floor, fast-food booth.
